Avocado Toast

Avocado Toast with Bacon & Over Easy Egg

Ingredients: 1 piece of whole grain bread, 3 pieces thick cut bacon, 2 avocados, 2 eggs,1 lime, ¼ cup cilantro, 1 jalapeño 

Equipment: 1 Small nonstick sauté pan, Toaster, Small bowl, Salt and pepper, Baking pan, Tinfoil, Pan spray

Method: Preheat the oven to 350 degrees Fahrenheit. Place the bacon on a tin foil lined baking pan and place in the oven for 15 minutes or till desired crispness. Chop the cilantro and half the jalapeño and place into a small bowl. Cut the lime in halve and juice into the bowl. Cut both avocados in half and remove the seed. Take a spoon and remove the avocado from the skin place in the same mixing bowl and mash all together. Season to taste with salt and pepper. place the pan on medium heat and use the pan spray to coat the pan. Crack two eggs in the pan and spray the top of the eggs with the pan spray. Cook till desired egg consistency (hard, medium, soft, over easy). Place the bread in the toaster till its golden brown. Place on a small plate and add the 3 pieces of bacon. Avocado puree and finish with the eggs.

Lime & Beer Rotisserie Chicken 

Ingredients: 1 whole chicken, 2 limes, 1 cup sugar, ½ cup salt, 1 can or bottle beer, ¼ oz oregano 

Equipment: Grill or Rotisserie, 1 Large Pot, Thermometer

Method: Remove the chicken and rinse. In a large pot combine the salt, sugar, beer and oregano. Cut the two limes in half and squeeze the juice into the pot along with the rind. Place chicken inside and add water till its submerged. This will create the brine, so the chicken retains flavor and becomes juicy on the inside and crispy on the outside. Place in the refrigerator overnight.

Remove the chicken from the brine into a small baking pan. Toss the brine. Take the rotisserie from the grill and run it through the middle of the chicken. Preheat the grill to high with the rotisserie setting. Turn the spit speed on low for the first hour. Monitor and check the temperature till the internal chicken is 165 degrees Fahrenheit.

 If you do not have you can preheat the oven to 225 degrees and place inside on a roasting pan. Take the temperature often and when it reaches 145 turn the oven up to 450 degrees Fahrenheit. Watch the chicken till the internal temperature is 165 degrees Fahrenheit.
