Ken Butler, Executive Chef

Known for his passion for food, fresh ingredients and commitment to sourcing the best products, Executive Chef Kenneth Butler brings his knowledge and creativity to Manor Vail Lodge and The Fitz Bar & Restaurant.

Chef Ken developed his culinary skills and love for wine and spirits working at some of the best mountain resorts in Colorado. Prior to Manor Vail Lodge, he was a Sous chef for the Andaz Maui, at Wailea Resort. In 2013, Chef Ken won his region for Cochon 555 and became an accredited level one sommelier by the Court of master sommeliers. The creative freedom to go beyond in the kitchen results in his unique modern American cuisine. 

Gage Smit, Sous-Chef de Cuisine

Having been raised on the island of Maui, Hawaii, Gage learned at a young age the importance of keeping indigents local due to high shipping costs.  Bringing the same love for local farmers, fishermen and ranchers to the Vail Valley, Gage continues to work hand in hand creating lasting partnerships.

Aftering graduating from the Maui Culinary Academy in the top of his class with both an Associate Degree in Culinary Arts as well and an Associate Degree in Restaurant Management, Gage interned at some of New York City’s top restaurant including, Eleven Madison Park, Nomad and Gramercy Tavern.

Today, Gage comes to Manor Vail Lodge with an appreciation for fresh seafood and the amount a finesse that is required to cook it properly. “Every dish that leaves my kitchen should leave a lasting memory with the guest.”
