Weston Schroeder, Executive Chef C.E.C

Weston adds knowledge and finesse to dining at Manor Vail Lodge. He has a strong background in modern American cuisine, regional Italian cuisine, and creative menu development. Weston is finding new ways to infuse his technique and style into the Colorado western theme.

Originally from Kansas City Missouri, Weston started out in the culinary world at an early age. He attended Johnson County Culinary Arts School to pursue his culinary degree. He continued his education by attending the Culinary Institute of America in Hyde Park, New York and received his certification of Pro Chef Level II through the American Culinary Federation.

Prior to Vail Manor Lodge, Chef began his career at the American Restaurant in Kansas City, one of the city’s top restaurants and with some of America’s finest and highly decorated chefs. Weston started his apprenticeship under Chef Celina Tio. In 2006, Weston received his certificate of Level I Sommelier and also awarded “Chef of the Year 2006” by the Greater Kansas City Food & Wine Association. Weston also served as Executive Chef of the Pepsi Center in Denver, Colorado, as the manager of culinary operations.

Eric Berggren, Chef De Cuisine

Eric attended the Le Cordon Bleu College of Culinary Arts in Pasadena. During his studies, Eric held the position as Executive Chef at Blue Plate Restaurant of Santa Monica and Stevie’s catering. Now back in the Vail Valley, with over 20 years of culinary experience, Eric adds new knowledge and flair to the Manor Vail Lodge Culinary team. Eric plays a highly creative role next to Executive Chef Weston Schroeder in the production and orchestration of the Lord Gore Restaurant, The Fitz Lounge and Banquets/Catering services.
